I know you're tired of hearing this already, but given what you are 
trying to do then Debian is really _the_ platform to go for.  Be 
prepared for it not being "the latest kit" but appreciate that once you 
get past the ugly-but-sensible install it really is very nice to manage 
a rock solid.

Here we ruin Debian on our production machines and servers and Gentoo on 
our desktops and all is well and good.
