How about I:

emerge Xorg Kde Koffice

or:

emerge Xorg Gnome evolution openoffice-bin

Which do you fancy - I have all these on my server so it's no problem to 
install. I could even do you a nice bootsplash start up etc. etc. and a 2.6.6 
kernel.

Currently I have /boot /  and swp on hda (20Gb) and /home on hdb (10Gb). It 
would not be a problem to install Winders on the 10Gb Drive and leave the 
boot stuff to grub.
