5140 being one of the ruggedised Series 40 phones? I think you would find
that Series 40 phones are unlikely to be good candidates for an alternative
operating system due to their low performance and limited feature set.

If you can get hold of a Series 60 phones, it is possible to write your own
software in C++, Java or even python, and there is a reasonable amount of
info online for that
(e.g.http://www.onlamp.com/pub/a/onlamp/2004/09/16/symbian_programming.html).

Installing a new OS might be another matter.  Best bet would be either to
start with a Nokia 770 :) or else jump ship from Nokia and get yourself
something a bit more open, with a bit more grunt, like a PDA with GSM.
handhelds.org has a distro designed for PDAs.

There is also the homebrew cellphone club which has recieved a lot of
attention recently, but I don't think they have anything of interest yet.
