You can often get the domains back, but there is effort involved so if you
can avoid getting into that position in the first place then it's a good

Serious or not, I think the key thing is that there's no reason _not_ to
have the domain registered in your own name - having it registered in the
hosting providers name is not cheaper or easier (so long as you pick a
decent service provider in the first place).
Domain names can be fairly essential to an organisation - you wouldn't
normally want to allow a third party to "own" something that essential to
you without very good reason, even if the chances of them using it
against you are low.
