I 100% agree with Daniel. OBS Studio https://obsproject.com/ is likely to be the way to go.
sudo apt install obs-studio
works on my Linux Mint 21.2 installation here. There are various other obs-related packages too, I'm not sure whether any of them would help with Rhys' specific need.
apt search ^obs-
will get you a list of those packages.
