Right,

I've used fetchmail to poll the remote ISP mail server. This sucks down 
mail to your local server. It can be setup to do it every X minutes or 
one demand (When you run it).

If you have an IMAP server (e.g. cyrus or uw-imap), your mail transfer 
agent (e.g. sendmail or postfix) can then receive the "fetchmail"ed 
mail, and store it on the IMAP server.

Using IMAP you can connect to it through a variety of methods - e.g. 
SquirrelMail, Horde (both webmail interfaces) or through things like 
Mozilla, Evolution, Outlook etc.


Your local server can send mail directly using it's MTA, and if you 
happen to email yourself or someone else within your local network 
things will be quite quick.
