MoinMoin is great. It also supports limited access
control lists (ACLs) - a feature that I needed for
Forge (www.jonobacon.org/forge).

PHPWiki has potential but is not quite ready yet.
MoinMoin, like every other Wiki, has terrible UI
flaws, but is actually pretty damn good. Go for it. :D
