Do you mean as a person browsing the web or as the owner of a website,
who shows Google adverts?

If the first, Adblock Plus for Firefox is widely used for blocking
adverts in webpages. I don't know if it could be fine grained enough
to allow the adverts to show, but block the tracking. Blocking cookies
may not be enough, if Google also some form a javascript tracking ala
Google Analytics.
