My neighbour uses an iPod Nano with an Ubuntu (6.06) PC with success.
She uses a program called GtkPod to manage the music on the iPod.

But... beware, I read some reports recently that Apple had modified
their firmware to prevent users from using anything other than the
iTunes software to manage music on an iPod.

I'd do a bit of research on that. It may be that newer iPods present
problems.
