Excuse me answering my own question, but I've had the chance to give
Aptana a longer spin for the last hour or so ... and I'm quite
impressed.

It's fully cross-platform, and it does most of what my students are
likely to want to do. 

The fact that it will plug into Eclipse is also quite nice, since a
proportion of the programmers among my students also use Eclipse at
work.

If anyone is looking for an easy to learn/use and extendable editor/IDE,
it's certainly worth a look.
