I don't know much about bridging adaptors, but from other stuff that I've
done with vlans I would suggest that the adaptors need to be up and
working.

If you don't want eth0/1 to have an ip address that can be used by the
actual machine you can always set the address to 0.0.0.0.  Again I don't
have any actual experinec with bridging but I don't see why this shouldn't
work.
