One obvious way would be the User-agent line in the http headers. These
often say the platform in use.
If someone uses Mozilla on Linux, it looks a whole lot different from
using IE on NT.
User-Agent: Mozilla/3.01 (X11; I; Linux 2.2.19 i586)
vs
User-Agent: Mozilla/4.0 (compatible; MSIE 5.0; Windows NT; DigExt)
And if you strip the User-Agent lines out, that would then be a flag to
look further.
I reckon that email headers would be similar, and there are probably
other tip offs.
