The stuff on that CD will be out of date ;) a new texmacs was released
two days ago (I think it was; maybe three).

That's fine. apt's dependency analysis will handle things OK; the
problem with trying to get stuff from unstable when you're running
stable is that they're presently so far apart that you'll often find the
dependency analysis forcing you to download half your system from
unstable.

Probably using woody/testing is better right now; it's not *that* far
behind unstable and you know the stuff in it won't have major bugs
(which is of course not at all true of unstable ;) )
