Exim is much more than a simple basic system, it has many options
available that are normally unselected in the default configuration, but are
there for your use if you wish, together with the relevant documentation.

Individual software packages have their own documentation which is not
usually in the form of a HOWTO. The main documentation for packages in
Debian is in
/usr/share/doc/

You could spend much more than 10 minutes arguing about what a simple
E-Mail server should or should not do, and by the time you reach any sort of
conclusion you will have added a few requirements that would involve
changing to one which offers more.
