"Use at your own risk" would seem to cover it all ;-)

I find it hard to believe that an ac.uk has any greater need for such a 
disclaimer than ISPs who -- ostensibly -- profit directly from the provision 
of such a service. Ergo, you would not need to say more than, say, Demon ISP 
whose mail AUP is at http://www.demon.net/helpdesk/aup/mail.shtml

Mail for students is no doubt provided as part of a more general package of 
Internet access; I would have thought it sufficient to note that mail access 
is subject to the general limits the Internet access is, and just noting that 
fact would neatly sidestep the problem altogether.
