If as a part of the interview process you are not going to evaluate how
the person works in real-world situations; I cant see how you are ever
going to build that confidence required to hire someone. Randomly
bringing in people and then hoping they 'mature well' in the
organisation is not only a waste of organisation resources, its also a
waste of the $employee's time.
Btw, I feel the age of the 'generic' sysadmin is mostly something that's
starting to feel like an idea from the past. Just as Linux has main
streamed in the past few years, expecting specialised abilities in
people who manage and run focused, specific infrastructure around it has
been becoming more and more of a norm these days.
Unless one is in the business of education, hiring a mail transport
admin who didnt know his MX stuff well, isn't something I'm going to
consider - on the other hand, if such a person has made it into the
interview stage, something earlier in the filtration process is
potentially broken. On the other hand, asking someone about corner case
MX setups when hiring someone for a most storage-admin related role is a
bit of a waste. Unless, the aim is to create by-force a situation where
the person is on unfamiliar grounds and to see how that person reacts
and works out from there.

Not at full speed, imho most organisations would buffer 2 to 6 months
for that to happen. But unless someone has been vegetating at their
previous job, not expecting them to be even marginally productive
technically is setting some seriously low barriers.
