[Gloucs] Voice Recognition / Control help

Thanks to a rather over-zealous mountain bike session I now have one broken hand and one severely injured hand. This is obviously making my text entry a tad slower. This message has taken nearly 10 minutes.
Does anyone know of a usable voice recognition app or even voice control software that's extremely configurable? I am currently using Windoze to help, but really need to get back to Linux (Flavour not important, even if it means Ubuntu!) and I don't really want to do VM windoze with Naturally Speaking or equivalent if I can avoid it.
Any other suggestions are always welcome ( Apart from "don't fall off", "get stabilizers", "learn to ride", etc, etc)
