A process can use over 100% when it is multi-threaded and is running
code on multiple processors (or cores) simultaneously.  A thread is like
a process you see in 'ps' except that multiple threads share the same
memory space as apposed to a multi-process program that doesn't.

You can expand out the threads in an individual process by adding the -L
argument to ps. e.g.

$ ps -AL
