Mike,

did you upgrade the BIOS at any stage?
that may account for different behaviours for the hardware.

Yes - it was APIC.  (APCI is fine, but the symptoms I described pointed 
towards an interrupt problem and behold noapic fixed it.)  I was a bit 
baffled about how to get it in - given that it's not even installed so 
no grub entry to modify.  However the installer did have some options 
for setting kernel flags and that was enough.  Helpfully the installer 
then put the same option in the grub file.

The question remains as to why the kernel I was using under 7.10 was 
fine with APIC enabled on that hardware and the latest is not. 
Something I suspect I don't have the energy to dig through given the 
number of patches in between and the length of my to-do list.  Though I 
do wonder what I'll loose by not having that enabled.
