Yes, self-hosting does have its attractions, and I do have the time to
do it with, and I’ve even got some of the equipment, a spare computer
but no monitor! So am now wondering if I could self-host on this
machine running debian stable?

Yes, I am interested, but am only going to do it via email atm, it
gives me time to think things through without committing myself and
without embarrassing calls to stop the progress of things too. 

So, I am interested in hosting with you 2 sites, both org.uk, one a
wordpress site, the other a plain html site, which once things have
become stable will be rebuilt as a wordpress site as well. Currently
the blog=wordpress site is hitting 30mb of php memory which is causing
major problems which 1and1 don’t seem to want to work with me to keep
me as their customer. E.g. they've sent me an email saying that the
'basic account' has now 60mb php memory, but they haven't bothered
telling me how much it would cost to [a] upgrade, or [b] move over to.

Hence I want to move to another host who actually cares and takes an
interest in their clients!
