Apologies if this has already been mentioned, but how about one of the boot 
from CD-ROM distros?  I'm sure a local FE college would let you use one of 
their labs if it was a not-for-profit project....  

I think it's a good idea, by the way.  Only problem might be that there would 
be more people wanting to teach than be taught.
