Since they're both dedicated servers, I would imagine they're pretty  
close network wise although the IPs themselves are in different RIPE  
blocks. traceroute shows just the default gateway stuck in the middle  
of the two boxes and apparently I can move a virtual IP from one box  
to the other so I suspect that they might even be on the same  
physical network.

I've tried copying the data from the old box to my machine at home  
but obviously over a 3Mbps cable modem it wasn't entirely a brilliant  
test. I'm just about to try copying a similar amount from the new box.

I thought perhaps it was due to the speed of the transfer but even  
using --bwlimit=300 with rsync fails sooner or later.

Because they're dedicated servers, I'm unable to tell if the nics are  
onboard or not but I would imagine they have. I would also be unable  
to swap them out myself if they're not onboard.
