Hello Mr Lurker :)

Framework wise - most of them have videos / quick starts on their
website, which if watched may give you some feel of whether they would
fit with your preferred way of working.

Cake, Symfony and CodeIgnitor are pretty much full stack frameworks,
which do everything. If you'd rather pick and choose (perhaps you have
existing php knowledge/libraries/way of working) then you might want to
look at the Zend Framework (you can use this as a full stack framework,
but the dependencies between it's various modules are quite low, so it's
not an all or nothing).

Code Igniter (and it's fork Kohana - http://kohanaphp.com/home.html )
are supposed to be very quick and simple to use, while the others tend
to do more 'magic' stuff in the background (so I've heard anyway).

Personally I don't use any of the above, as we've developed our own
framework, but over time it's becoming more Zend-Framework-ified.
