Good luck with that. I believe that normally the gyroscope is a key
part of the dynamic control. I think it may prove very difficult to
obtain stability without input from the gyro, as that provides an
indication of rate of rotation, though my experience is mostly with
helicopters which are intrinsically less stable than a multi rotor
drone, so perhaps it can be made to work with a drone.
I think you mentioned a mercury switch earlier. That will not tell
you anything that the accelerometer doesn't.
